What I love about General Santos is that everytime I go to this place, there is always something new to discover.  WOW!!! I got to discover this fish that has a taste of a first class fish but very inexpensive.   It is called Pakol.  Thanks to my friend Edwin Tagalog who introduce me to this extraordinary fish.  This fish has a hard skin and is colored black.  Even if you put the fish directly on fire, the skin still remains hard.  This skin of the fish has made it easy to grill while retaining the softness of the meat. 

Where to find

YOu may buy PAKOL in General Santos Public Market at Acharon cor. Cagampang st. This is a seasonal fish depending on the tide of the water.  It is easy to cook. No need to marinate or to add seasoning.  Just grill it directly.  The meat is very tasty and as a Pinoy, it goes very well this a condiment mixture of calamansi, soy, a little bit of vinegar and siling labuyo (birds eye pepper).   For me, it is much tastier than the expensive fishes in the market.  Rapsa Talaga dito sa Gensan!!!
