In Luzon, when you say Tinola, it refers to the clear chicken broth with papayas and chili leaves. In the Visayas, when you say tinola, it refers to the clear fish broth.  This is one of my favorite morning dish.  Very delectable most specially when served very hot and the fish is the freshest catch of the day.  Fresh fish has a tang of sweetness and firmness to its meat. That is why, when I visit Cargara, Leyte, this is always part of my culinary itinerary. Eat Tinola at New Town.

   

Where to Find

 

Newtown can be found at Carigara, Leyte. Carigara is an old town located at Leyte province. It was the old capital of Leyte. If you are fun of Antique houses, you will find it there.  . When you happen to pass by Carigara in your way to Ormoc City or Leyte provinces, don’t forget to take your lunch at Newtown and experience their tinola. Its worth the try.
